Mexican Lasagna

1 lb. Lean ground beef
¼ cup of taco seasoning (Taco Bell)
10 flour tortillas (Fat Free)
14 oz. Fat Free Refried beans
1 cup of Monterey Jack cheese (light)
1 cup of Mozzarella cheese (light)
1 cup salsa (pace picante - mild, medium or hot)
Green pepper ½ cup green pepper
Taco sauce ¾ cup taco sauce
Method : In frying pan, sauté beef until browned, pour off fat and wash the beef to remove excess fat. Next place in the skillet and stir in taco seasoning. Spray lightly (Olive Oil cooking Spray) an 8" x 8" baking pan, set aside. Mix cheeses together. Cover bottom of pan with flour tortillas and spread on top half the meat mixture. Next cover meat with more tortillas and spread the refried beans and 1 cup of the cheese. Place another layer of tortillas and spread with salsa and peppers. Place more tortillas in the pan; cover with remaining meat mixture. The last flour tortillas are then placed on top. Spread taco sauce and remaining 1 cup of cheese, more if you like lots of cheese. Tent foil over top, as it will stick to the cheese if there isn’t a space between the foil and cheese. Bake at 350º for 30 minutes.
